Bacon and Gruyere Egg Bites


  • 6 eggs

  • 1/2 cup cottage cheese

  • 1 1/4 cups gruyere cheese or sharp cheddar, shredded

  • 4 slices of pre-cooked bacon, diced

  • salt and black pepper to taste

  • Optional:

    • 1/3 cup bell pepper, diced

    • 1/3 cup red onion, diced

    • 1/2 tsp hot sauce


  1. Preheat oven to 350°F.

  2. Blend together eggs, cottage cheese, 1 cup of shredded cheese, salt and black pepper.

  3. Place the silicone muffin tray on a cookie sheet. Then begin to fill the muffin tray, evenly divide diced veggies and bacon then fill with the blended egg mixture. Top with remaining cheese.

  4. Fill a baking dish with water and place on the bottom rack. Place the cookie sheet with pre-filled muffin tray on the top rack. Bake for 20 - 25 minutes.
