Zucchini Rollatini

a healthy twist on a classic


+ 3 large zucchini, sliced lengthwise

+ 1 tbsp olive oil

+ 1 lb ground italian sausage or ground turkey with italian seasoning

+ 1 cup skim ricotta cheese

+ 1/3 cup grated parmesan

+ 1 large egg

+ 1/4 cup chopped basil leaves

+ 2 cloves garlic, minced

+ 1 1/2 cups marinara sauce

+ 2 cups shredded mozzarella

+ Seasoning: salt and pepper


Step 1

Slice the zucchini lengthwise, I used a cheese slicer. Line a baking sheet with paper towels and lay sliced zucchini flat.

Sprinkle each side with salt, 1/4 tsp salt.

Let stand for 15 minutes.

Step 2

Heat olive oil in a large skillet, add sausage or ground turkey. Cook on medium heat until browned, about 3-5 minutes.

Step 3

In a medium bowl, combine sausage, ricotta, parmesan, egg, basil, and garlic. Season with salt and pepper.

Step 4

Preheat oven to 400°.

Step 5

Spread 1 cup of marinara sauce onto the bottom of a 10-inch oven proof dish or skillet.

Step 6

Spread 1 tbsp of ricotta mixture evenly along each zucchini slice; sprinkle with mozzarella cheese. Roll up and place in dish or skillet. Once completed with the remaining zucchini, top with the remaining marinara sauce and mozzarella cheese.

Step 7

Bake for 25 - 30 minutes, or until the cheese is golden brown.
