Peanut Butter Banana Oatmeal Cups

Protein packed sweet treat!

Ingredients


+ 3 ripe bananas

+ 1/2 cup peanut butter

+ 2 eggs

+ 2 tbsp maple syrup

+ 2/3 cup unsweetened almond milk

+ 1 tsp vanilla extract

+ 2 cups old fashioned rolled oats

+ 1 tsp baking powder

+ 1 tsp cinnamon

+ 1/4 tsp salt

+ 1/3 cup dark chocolate chips


Directions


Step 1

Preheat the oven to 350° and line muffin tin.


Step 2

In a large bowl, combine wet ingredients; mashed bananas, peanut butter, eggs, maple syrup, almond milk, and vanilla extract, mix until smooth.


Step 3

In the same bowl, combine dry ingredients; oatmeal, baking powder, cinnamon, and salt. Once combined well, mix in chocolate chips slowly.


Step 4

Evenly distribute the muffin mix between muffin tins. Bake for 20 - 25 minutes.


Step 5

Optional - Sprinkle with extra chocolate chips or drizzle with peanut butter!
