Savory and zesty

Ingredients
+ 1/2 c quinoa
+ 16 oz of spinach or your favorite greens
+ 2 c edamame - frozen
+ roasted almonds and dried cranberries (I used Fresh Gourmet Salad Topping Mix)
+ sesame ginger dressing (I used taste of Inspirations)
Directions
Step 1
Cook the quinoa for the week! - In a pot combine 1 c of water and 1/2 c of quinoa. Bring to a boil, then reduce to low and cook for ~20 minutes. Store the leftover quinoa in a tupperware, ready to use later on!
Step 2
In a microwave safe bowl, heat up the frozen edamame according the the package.
Step 3
In a large bowl, combine cooked quinoa, spinach, warmed edamame, and toppings - ENJOY!
