Corn & Black Bean Salsa

Sweet and Tangy


+ 1 15 oz can black beans

+ 2 cups frozen corn or 2 stalks

+ 1/3 cup red onion, chopped

+ 1 red bell pepper, chopped

+ 3 tbsp scallion, chopped

+ 1/4 cup cilantro, chopped

+ 2 limes, juiced

+ olive oil

+ seasoning: salt, black pepper, garlic powder, paprika, oregano


Step 1

Chop your veggies!

Step 2

In a small bowl, combine corn, black beans, pepper, red onion, scallions, and cilantro.

Step 3

Whisk together lime juice, drizzle of olive oil, dried oregano, paprika, and season with s&p.

Step 4

Pour dressing over the salsa and mix together. Refrigerate an hour before serving!
