Cook up quick and packed with flavor!
+ 1 15 oz can chickpeas
+ 1 15 oz can lite coconut milk
+ 1 small onion, chopped
+ 2 celery stalks, chopped
+ 2 carrots, chopped
+ 8 tortillas
+ olive oil
+ seasoning: salt, black pepper, coriander, turmeric, mustard, lemon
Chop your veggies! Pro tip: throw them in a food processor to speed up the process!
Heat a drizzle of olive oil in a pan. Add onion, carrots, and celery. Season with salt and pepper. Sauté on medium heat for 3 minutes.
Add coconut milk. Mix in seasonings: salt, black pepper, coriander, turmeric, mustard, lemon - I used two premixed spice blends: Frontier Co-op's Curry Powder and Indian Curry Seasoning.
Toss chickpeas into the pan to heat up. Once warm, make your tacos and enjoy!
