Chicken & Veggie Kabobs

Simple, but delicious!


Ingredients


+ 1lb chicken

+ 2 green pepper, chopped

+ 2 orange pepper, chopped

+ 1/2 red onion, chopped

Marinade:

+ 3 tbsp soy sauce or coconut amino

+ 2 tbsp rice vinegar

+ 1- 2 tbsp honey

+ 1 tbsp sriracha

+ 2 tsp sesame oil

+ 2 - 3 tbsp olive oil

+ 1 tsp ginger

+ 4 gloves garlic, chopped

+ seasoning: salt, black pepper



Directions


Step 1

Marinade the chicken; combine soy sauce, rice vinegar, honey, sriracha, sesame oil, olive oil, ginger and garlic into a small bowl. Cube the chicken and let marinade for 30 minutes to an hour. While the chicken is marinating, soak the skewers in water for an hour.


Step 2

Chop you veggies into squares! Before assembling, mix the veggies with olive oil and season with s&p. Next add the chicken and veggies to the skewer - arrange based on your liking!


Step 3

Fire up the grill! Cook on medium heat (350° - 450°) for 15 - 20 minutes, turning once or twice.
