Breakfast Tacos

My Morning Fuel!

Ingredients


+ 4 eggs

+ 1 avocado

+ 1 roma tomato

+ 1/4 onion, diced

+ squeeze of lime juice

+ 4 corn tortillas

+ seasoning: salt, black pepper, garlic powder

+ optional toppings: cheese, hot sauce


Directions


Step 1

Dice tomatoes and onions, combine in bowl with lime juice, s&p, and garlic powder. Mash the avocado and season with s&p and garlic powder.


Step 2

In a small bowl, whisk together the eggs and season.


Step 3

Scramble the eggs in a frying pan, sprinkle with cheese.


Step 4

Layer the tortillas with guac, salsa, and scrambled eggs - pair with a side of fruit and ready to serve!
