Banana Lemon Chia Muffin

with tart lemon icing

Ingredients


+ 2 cup oat flour

+ 3/4 tsp baking soda

+ 1 tsp cinnamon

+ 1/4 tsp salt

+ 2 ripe bananas, mashed

+ 2 eggs, beaten

+ 1/3 cup maple syrup

+ 1 tsp vanilla extract

+ 1/2 cup unsweetened almond milk

+ 1 tbsp coconut oil, melted

+ 2 tsp lemon zest

+ 1 tbsp lemon juice

+ 2 tbsp chia seeds


Tart Lemon Icing:

+ 1/2 cup confectioner sugar

+ 1 tbsp lemon juice

+ 1 tbsp maple syrup


Directions

Step 1

Preheat the oven to 350° and line muffin tin.


Step 2

In a large bowl, mash the two ripened bananas. Add wet ingredients; melted coconut oil, eggs, maple syrup, almond milk, lemon juice and zest. Mix until smooth.


Step 3

In the same bowl, combine dry ingredients; flour, cinnamon, baking soda, salt, and cinnamon. Fold in chia seeds and let sit for 2-3 minutes to absorb the liquid.


Step 4

Evenly distribute the muffin mix between muffin tins. Bake for 20 - 25 minutes.


Step 5

Whisk together the ingredients for the icing - once the muffins have cooled, drizzle on top and enjoy!
